Description

Vintage Brut is the heart and soul of Chandon. Having full control over all the fine details of our vineyards, block by block, row by row, gives us the precision and best expression of Australian sparkling wine grapes. Layer all this with our Champagne heritage and knowledge, and it becomes possible to produce a vintage release which shows the personality of each season, all within the Chandon maison style.

WINE PROFILE
TASTING NOTES
Yellow hues with flecks of green, very fine bead and persistent mousse. Aromas of grapefruit typical of Whitlands, blend with Mirabelle plum classic Strathbogie Pinot Noir flavour, overlaying praline and fresh toast characters derived from age and time on yeast lees. Citrus zest, pink grapefruit and white peach fruits with hazelnut and toast characters. The palate has very fine bubbles and long, tight acidity.
VINEYARD
Vineyards in the Whitlands Plateau and Strathbogie Ranges bring the majority of the fruit for this wine, adding diverse flavour elements from each location. We look for fine natural acidity and long, lingering flavour. At a range of altitudes from 600m to 820m elevation, the location of these vineyards brings cool nights, allowing the slow development of Pinot Noir and Chardonnay flavours while retaining terrific natural acidity. A small inclusion from our original Coldstream vineyard adds further dimension.
WINE MAKING
Harvest began in mid-February in Coldstream and a little later in March for the more elevated Strathbogie and Whitlands Plateau. The Pinot Noir, Chardonnay and Pinot Meunier grapes from each site were pressed and fermented separately to ensure the unique characteristics of each parcel of fruit were retained. Importantly, the grapes were pressed in the vineyard, minimising the time between harvest and pressing, to protect the delicate aroma and minimise phenolic extraction. Each individual cuvée was then selected for its diverse varietal flavours, balanced structure and palate length – all essential for the Chandon Vintage Brut style. Following tirage and secondary fermentation, Chandon Vintage Brut 2015 spent over 36 months ageing on yeast, an essential part of the méthode traditionnelle process.
FOOD PAIRING NOTES
Roast chicken; Duck breast with cherry sauce; Sashimi and sushi
OTHER NOTES
Mild conditions in late winter and a favourable start to spring resulted in an early budburst for varieties such as Pinot Noir and Chardonnay. Late spring and early summer provided ideal conditions leading into veraison. Summer remained mild, with few days in excess of 35°C. This, combined with good canopy cover and cool nights, resulted in one of the best vintages since 2002 for early varieties, such as Pinot Noir and Chardonnay. Abundant flavour with some of the best acid balance we have seen shows amazing promise for the complexity and longevity of the 2015 wines.
